Kerala Egg Roast

A classic Kerala dish with caramelized onions, tomatoes, and spices.

Instructions

  1. Heat oil, sauté onions until deep golden.
  2. Add ginger‑garlic, spices, tomato; cook to a thick masala.
  3. Add slit boiled eggs; coat well and simmer 3–4 minutes.
  4. Finish with curry leaves. Serve with parotta or rice.
