
A classic Kerala dish with caramelized onions, tomatoes, and spices.
Ingredients
- 4 boiled eggs
- 2 onions (thinly sliced)
- 1 tomato (chopped)
- 1 tsp ginger‑garlic paste
- 1 tsp Kashmiri chili powder
- 1/2 tsp turmeric
- 1 tsp coriander powder
- Curry leaves, salt, oil
Instructions
- Heat oil, sauté onions until deep golden.
- Add ginger‑garlic, spices, tomato; cook to a thick masala.
- Add slit boiled eggs; coat well and simmer 3–4 minutes.
- Finish with curry leaves. Serve with parotta or rice.
